Why not have a go at one of these heirloom recipes:
Cousin Mary's recipe for Boxty:
8oz mashed potato,
1 teaspoon salt,
pinch of pepper,
1-2 oz butter,
1-2 oz flour.
Mix all ingredients together with a tiny bit of milk to make a stiff dough.
Roll out to 1/4 inch and cut into 8 pieces. Cook on griddle. Brown both sides.
Eat warm with big lump of butter as snack OR with crisp bacon and fried egg as meal.
Grandad's Colcannon recipe:
Boil floury potatoes, drain and mash with butter.
While boiling, chop bunch of spring onions finely and mix with butter.
Put hot potato mix in a circle on plate and shape hole in centre. Pop large knob of onion-mix butter in hole and eat with a spoon.
(Recipe books usually include cabbage/kale in colcannon but it is never made that way in Longford.)
